Awww...and welcome to the veghead club (where we really are vastly superior! Haha!) Beans! You can do anything and everything with beans! Get Rancho Gordo, srsly, the best! A very fun read. Thank you :)
Michael - in a recent essay you reflected on feeling like a “negative Nelly” and I think we all understand that feeling. Yet, animals and nature are in fact a tangible antidote to our daily suffering. My dogs bring me comfort for reasons we all understand. So lean into this new sense of wellbeing.
Animals are the most innocent and amazing creatures.lincluding all beautiful creatures such as insects and those whom you are scared of. They are God creatures and they all came on the ark. They are what connects you to the holy Spirit and nature. Animals are scared beings and are much better than most humans. We have to accept them because they are the true innocence of the universe. Anyone who even hurts abuse or kill animals are evil now I'm not talking about farmers and horticulture farmlands all over the planet. The ones who care and love them. You don't have to kill an animal to use it's fur or wool. Animall lover is not defined as having sex with an animal. That is down right an abomination. Anyone who does that should be shot dead because that is a sick and sinister . No one deserves to be raped whether animal or human. Have a blessed day🙏❤️🐾
I read Michael Gregor's "How Not to Die" about 10 years ago—he's built a booky empire since then—and its list of 15 diseases classed as lifestyle diseases (heart attack, stroke, diabetes, cancers, etc.). His research pointed to them all being avoidable with a vegetarian diet. I right quick switched to coconut milk in coffee (half & half was my daily dairy exposure), cut out most other dairy and beef/lamb altogether, used chicken or fish as a condiment every other week or sometimes not at all for 6 months at a shot. Sits really well. So far so good, and I'm at the age where the stuff starts showing up. Trying to rig my death.
I have a friend who has not eaten chicken since having met a charming and delightful chicken decades ago. I think about this every damn time I eat chicken. You named it: thanks for articulating the guilt part. It tracks. I can much more easily look an animal in the eye when abstaining.
My 9yo daughter asked to go vegan in January after watching the Blue Zones docuseries on Netflix. She had previously been vegetarian but like many other children, relied a lot on cheese and milk. We went vegan (I'd been a pecatarian), and have thoroughly enjoyed our food in a way we didn't enjoy it before. She began coming home from school saying she has more energy to run at recess. She's even commented that she thinks our new recipes taste better than Chick-fil-A or McDonald's, etc. That's been nice. It's nice to see my daughter enjoy legumes and all sorts of veggies, and as cat owners, yes, I think we do feel more connected. We just have our cat her first, we'll... sitz bath to clear up something left behind on her butt fur... ahem. I thought our cat might hate us during and after the big event (she sure tried with all her might to claw away out of the water), but it seems she forgave us within 20 minutes for the indignation. Perhaps she appreciated the bath in the long run. At any rate, have fun work the beans! Maybe play Brak's Bean Song.
I highly recommend the cookbook Cool Beans by Joe Yonan, and the Marry Me Tuscan Vegetable Soup from Plant You is awesome as well.

dear michael,
this is a delightful exchange with your cat, thank you for sharing it:
"Me: are you a good kitty?
Him: I am. I am a good ktty.
Me: I agree. Meeting adjourned."
glad you're feeling connected to animals more these days! a great way to feel!
love,
an animal named myq
Most dogs and cats are better than many people.
I used to hate squirrels but now I’m like, meh we’re all just trying to get by. I get it.
