Toulouse became my city seven years ago. I hope you find it as lovely as I do. If you are looking for suggestions, I recommend doing a Taste of Toulouse tour with Jessica Hammer (my husband and I did one of her tours shortly after we moved here, and learned a lot by tasting our way through the city.) I also suggest going to Albi or Cordes-sur-Ciel for a day trip.
It would really depend on how you envision your new life in France and your preferences, such as: How far do you want to be from a large airport? Do you want TGV access or is a connection OK? Preferred climate? Type of house (apartment/townhouse/house)? How far from the city center do you want to be? There are towns that feel very American like Tournefeuille or Plaisance-du-Touch, but there are others with lots of amenities but still feel French, like Montauban. If you want something more rural, I could give you 20 suggestions. For us, our must haves were: being near a real airport (Toulouse Blagnac has a good # of options to cities in Europe and N. Africa), large garden, not be in a medical desert (have options for specialists and dentists), good climate that still has 4 seasons, and reasonable proximity to a Jewish community so we could buy food and other items for the holidays. We live in a tiny village of 134 people located 1 hour south of Toulouse. There are lots of villages and towns in the greater Toulouse area depending on your must haves or wants. The people here are warm and friendly, and I have a view of the Pyrénées from my house. It was a big change for us because my husband and I are from NYC. However, we have no regrets making the move.
